On this episode of the Bourbon Friday Show we had the opportunity to talk with Sarah Schlafly, Co-Founder and CEO of Mighty Cricket, about her recent product launch and โcerealโ entrepreneur journey.
Approachable and Sustainable Protein
It takes 1,700 gallons of water to produce 1 pound of beef and nearly 700 gallons of water for a pound of chicken. By that measure, these two popular protein options wonโt be able to sustain the predicted population of 10 billion people by 2050.
Though soy protein is a decent alternativeโclocking in at 5 gallons of water per pound, there is still one better: crickets. Only one gallon of water needed to produce one pound of cricket proteinโmaking it one of the most sustainable food sources.
Better yet, cricket protein is higher quality than beef, which is commonly considered to be the highest quality protein consumed in the western world, due to its high amino acid content.
โIn addition to the protein, you get vitamin B12, you get five times more Omega-3s than salmon and three times more iron than spinachโฆ it is a nutrition powerhouse,โ says Schlafly. While insects may be a common staple for many around the world, it definitely seems more daunting to others whoโve never eaten them before, as Dustin McKissen discussed recently in an article on Inc.

Sweet Sophie is a maple syrup aged in Four Roses barrels right here in St. Louis. Due to the aging process, this syrup is unlike others with its smoky flavor coming from the char on the oak barrels.
